While at a conference in Denver, CO in 2010, I had dinner at the Appaloosa Grill. They had a great dish called ‘Truffle Garlic Fries’ on the menu. I had never enjoyed french fries so much in my life. I re-created the dish for my family and a vegan version for my husband.

Ingredients:

  • 1 pound cooked french fries in oven (frozen works best)
  • 4 cloves garlic, minced
  • Truffle oil (optional)
  • 1/2 cup olive oil
  • 1 T. chopped parsley
  • Salt and pepper to taste
  • Garlic butter for dipping sauce (see below)

In saucepan, heat olive oil  and saute the garlic, parsely, and a few drops of truffle oil. Reserve 1 tablespoon of this mixture for garlic butter. Toss the fries in the mixture. Dip in garlic butter.

For garlic butter, use 1 tablespoon of olive oil mixture and 3 tablespoons of EarthBalance vegan butter. Mix well. Use as dipping sauce for fries.
